This salsa is super healthy and have great nutritious value.

Peel the Tomatillos and wash them along with the Serrano peppers. Cut one Onion in half and separate the layers of one half. Save the rest. Put the Tomatillos, Serrano peppers, and the onion in the a pot, cover them with water and boil them until they change color, tis will take about 5 to 7 minutes of boiling. Mean wile, Prepare the Avocados and the cilantro. |

Cut the avocados in Half, remove the pitt, peel completely and cut in slices. Cut the cilantro stem and discard, then Chop the cilantro, you will use only one cup of it. Mince the Garlic. Serve warm or cold with sea food, chicken or as salad dressing.

Add the Avocados, cilantro, the first 1/2 of the lime juice, the garlic, salt and pepper. Once the tomatillos, serranos and onions are ready, add them also the the blender. Finally add the Olive Oil, Salt and Pepper to taste. Blend everything together intill you make a smooth paste. Now taste it and you can add the rest of the lime juice if you like or save it. You can also add more Olive Oil if you wish, but if you want to make it more liquid without the use of the oil, add more tomatillos until you reach the texture desired. |

The Avocado will not go dark due to the acids in the Lime and Tomatillos. This salsa with last a couple of weeks in your refrigerator. Keep in a closed container.
