With over 50 kilos of Queen Charlotte Islands white fish, including a lot of ling cod, this recipe is just perfect. The recipe does well with halibut and yelloweye rockfish (red snapper) as well. Very tasty and healthy.
This is a very easy recipe. For even more tenderness and flavour, use boneless chicken thighs.
Placing unbaked spanakopitas on cake cooling wire racks within in the baking dish assures the bottoms of the pastries will brown and always be crisp after baking. It also allows any excess butter to drain so pastry does does get soggy.
Looks fabulous...could taste it in my mind while watching the instruction!
I'm with harry on this. Cheese, goat cheese, bacon....and more salt at each stage? With eggs?
I think I'll be able to eat this very delicious sounding dish once a year to take care of my sodium and cholesteral cravings.

I'd add some uncooked prawns along with the chicken and chorizo when adding it to the semi-cooked rice for the last ten minutes of cooking.

This is a fabulous recipe and has always garnered raves from family and guests. I know it's not as "pure" but this is one place that a microwave oven gives excellent results for "baking" the potato, especially when stuck with using the more watery Russett potato — the bonus is much faster cooking; no hard, dry spots; and a drier, fluffier cooked potato. I have to say, this recipe produces far better gnocchi than any that I have tried in even the best Italian restaurants in our town.
Mmmm. Adding well-cooked and 1/4 mashed turnips or parsnips is really nice too, along with a big dollop of warmed sour cream to balance the sweetness of the root vegies.
Wow that's a pretty impressive party platter!
I would add a tablespoon of prepared horseradish and a good grind of pepper to the cream cheese in the salmon tortilla rollups, but the recipe is good as it stands as well.
Mama mia....now that's one tasty, and rich pasta dish. Fabulous!
