A preference for salmon

Overfishing has caused a sharp decline in wild Steelhead populations, so I went with the Alaska Salmon. It was delicious and so easy.

I also used tofu to make an alternative for my one vegetarian guest and she really enjoyed it.

Very Popular!

I've made these tomatoes twice now and each time they disappear very quickly. I've also passed the recipe on to a friend who was very pleased with the results. I'm making them again today for Christmas dinner.

Thanks for the great (and very easy) recipe.
