I can't find long dried Thai chillies. I know the small ones are hotter, but can I substitute 9 long dried chillies with a few small fresh ones?
Also, will the paste keep if I make it a day ahead of the rest? Thanks!
The "Cooking and finishing the dish" step brings you to the "Mise en Place for the Sauce" step in Lemon Chicken w/ Pine Nuts and olives instead of the Lomo Saltado. I don't know why it does this. I've played the Lomo Saltado recipe before and it worked then.
Just thought you might like to fix this mix-up.

Truly one of my favourites. (Luckily, I had some Thai green curry paste leftover in the freezer!)
Everything was fine until I added the flour and mixed.
No moist clumps formed. It just got creamier and creamier.
I can't shape it nicely like the video. It just kind of sticks together.
What can I do to save this dessert? Please help.
Yeah, it's the dough. I'm thinking I put too much butter.
I think I'll just start over.

I tried again this time with the right amount of butter.
It was a homerun at the dinner party! The crust was a particular hit.
So decadent! (especially with Haagen Daas Vanilla Swiss Almond ice cream!)
Once again, very impressed with Rouxbe!
